Growing up in Louisiana Red Beans and Rice was considered a weekly staple for most families especially on Monday's and schools included it on the weekly or bi-weekly menu for lunch. It's still one of my favorite dishes, but with a hectic life days I don't always have time to put it in the slow cooker or cook it on the stove. Over the years my recipe has evolved and with my love of new cooking tools like the instant pot I've experimented with cooking it with different ingredients and time limits. Below is my attempt at a solid recipe with my own twist on it.
Ingredients
Vegetables
- 1 pound dry kidney beans
- 1 large onion, chopped
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 2 tablespoons minced garlic
- 2 stalks celery, chopped
- 2 tablespoons minced garlic
- 1 or 2 cans of same beans of dried
Spices
- 2 bay leaves
- 1/2 teaspoon cayenne pepper
- 1 teaspoon dried thyme
- 1/4 teaspoon dried sage
- 1 tablespoon dried parsley
- 1 teaspoon Cajun seasoning
Meat
- 1 pound andouille sausage, sliced or any meat you want
- 1/2 to 1 lb bacon, cooked
Fluids
- 4-6 cups water
- 1/4 cup olive oil
- 1/3 cup, vinegar base BBQ sauce.
Directions
- Rinse 1lb of dry red kidney beans under cold water and let them soak over night.
- Place only the bacon grease in instant pot
- Cut/Dice vegetables and place in instant pot
- Place all spices in instant pot
- Pour in olive oil and BBQ sauce
- Pour in 4-6 cups of water
- The water should barely be over the top of the beans.
- Set instant pot to 15 minutes on high pressure
- Quick release pressure on instant pot.
- Place bacon and other desired meat in instant pot stir well
- Set instant pot for 30 minutes on high pressure, let instant pot release naturally
Tips
- If beans did not thicken
- Place instant pot on saute high
- Drain can beans, place in bowl, and smash them up with a fork or potato smasher.
- Pour thoroughly smashed beans in instant pot
- Stir every few minutes until beans thicken.
